👨‍🍳 Instructions

  1. Peel and chop the bottle gourd (lauki) into small cubes. Finely chop the onion, tomatoes, and green chilies, and prepare ginger-garlic paste.
  2. Heat oil in a pan over medium heat. Add cumin seeds and asafoetida; let them splutter.
  3. Add chopped onions and green chilies, sauté until onions turn translucent. Then add ginger-garlic paste and cook for another minute until fragrant.
  4. Stir in turmeric powder, coriander powder, and red chili powder, cooking for a few seconds until fragrant. Add chopped tomatoes and cook until they soften and the oil starts to separate.
  5. Add the chopped bottle gourd, salt, and half a cup of water. Mix well, cover, and simmer on low heat for 15-20 minutes, or until the lauki is tender.
  6. Once the lauki is tender and cooked through, sprinkle with garam masala and fresh coriander leaves. Serve hot with roti, paratha, or rice.
