👨🍳 Instructions
- Peel and grate the bottle gourd (lauki). Squeeze out excess water thoroughly, as this is crucial for firm koftas. Discard the water.
- In a bowl, combine the squeezed lauki, gram flour, grated ginger, chopped green chili, half of the coriander powder, and half of the turmeric powder. Mix well to form a dough-like mixture.
- Divide the mixture into small portions and shape them into smooth, round koftas. Heat vegetable oil in a deep pan for frying.
- Carefully drop the koftas into the hot oil and fry them on medium heat until golden brown and cooked through. Remove and drain on paper towels.
- For the gravy, heat remaining vegetable oil in another pan. Add finely chopped onion and sauté until golden brown.
- Add ginger-garlic paste and sauté for another minute until fragrant. Then add finely chopped tomatoes and cook until they soften and the oil separates.
- Stir in the remaining coriander powder, red chili powder, remaining turmeric powder, and garam masala. Cook for 1-2 minutes, adding a splash of water if needed to prevent burning.
- Pour in water to achieve desired gravy consistency, bring to a simmer. Gently add the fried lauki koftas to the simmering gravy and cook for 5-7 minutes to allow them to absorb the flavors.
- Garnish with fresh coriander leaves and serve hot with roti, naan, or rice.
