- In a medium saucepan, combine the water and granulated sugar. Heat over medium heat, stirring occasionally, until the sugar completely dissolves, forming a simple syrup. Remove from heat and let cool.
- Once the simple syrup is cool, stir in the fresh lemon juice. Pour the mixture into a shallow metal pan or a freezer-safe dish.
- Place the pan in the freezer. After 30-45 minutes, check the granita; ice crystals should begin to form around the edges.
- Using a fork, scrape the icy parts towards the center of the pan, breaking up any large chunks. Return the pan to the freezer.
- Repeat the scraping process every 30-45 minutes for about 3-4 hours, until the granita has a light, fluffy, and crystalline texture. It should resemble coarse snow.
- Serve the lemon granita immediately in chilled glasses or bowls, optionally garnished with fresh lemon slices or mint sprigs.
