👨🍳 Instructions
- Rinse the lentils under cold water. Finely dice the onion, carrot, and celery to create a soffritto, and mince the garlic.
- Heat olive oil in a large pot or Dutch oven over medium heat. Add the diced onion, carrot, and celery; sauté for 8-10 minutes until softened, then add minced garlic and cook for 1 minute until fragrant.
- Stir in the tomato paste and cook for 2 minutes, then add the crushed tomatoes, rinsed lentils, vegetable broth, dried oregano, dried basil, and a bay leaf.
- Bring the mixture to a simmer, then reduce the heat to low, cover, and cook for 30-40 minutes, stirring occasionally, until the lentils are tender and the sauce has thickened.
- Remove the bay leaf, season with salt and pepper to taste. Serve hot, optionally garnished with fresh parsley.
