👨🍳 Instructions
- Rinse the red lentils thoroughly, then boil them in water until very soft and most of the water has been absorbed, about 15-20 minutes. Drain any excess water and mash the lentils well.
- In a bowl, combine the mashed lentils with finely chopped onion, minced garlic, grated ginger, fresh cilantro, ground spices, and breadcrumbs. Mix well until a cohesive mixture forms.
- Form the lentil mixture into small, flat kofta patties. Heat vegetable oil in a non-stick pan over medium heat and fry the kofta patties for 3-4 minutes per side, until golden brown and cooked through.
- Prepare the tahini sauce: in a small bowl, whisk together tahini, lemon juice, minced garlic, a splash of water, and chopped fresh parsley until smooth and creamy. Adjust water for desired consistency.
- Warm the whole wheat tortilla slightly for better flexibility. Spread a generous amount of tahini sauce on the tortilla.
- Arrange the fried lentil kofta patties, lettuce, sliced tomato, cucumber, and red onion in the center of the tortilla. Fold in the sides and roll up tightly to form a wrap.
