👨🍳 Instructions
- Rinse lentils thoroughly and cook in boiling water until very tender, about 20-25 minutes; drain any excess water well and mash roughly with a fork or potato masher.
- In a separate pan, heat olive oil and sauté diced onion and minced garlic until softened and fragrant, about 5-7 minutes.
- Combine the mashed lentils, sautéed onion and garlic, breadcrumbs, chickpea flour, cumin, coriander, turmeric, chili powder, and fresh herbs in a large bowl. Mix well until a cohesive mixture forms.
- Form the mixture into desired patty shapes, about 1-inch thick. You can dust them lightly with extra chickpea flour if they are too sticky.
- Heat a thin layer of olive oil in a non-stick pan over medium heat. Carefully place the lentil patties in the pan and cook for 4-6 minutes per side, or until golden brown and crispy.
- Serve the lentil patties hot, optionally with a dipping sauce or alongside a fresh salad.
