  1. Rinse dry lentils thoroughly under cold water; set aside. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add chopped onion and bell pepper to the pot; sauté for 5-7 minutes until softened. Stir in minced garlic and tomato paste, cooking for 1 minute until fragrant.

  4. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 30-35 minutes, or until the lentils are tender and the sauce has thickened. Stir occasionally to prevent sticking.
  5. Taste and adjust seasonings as needed. Serve the hot lentil sloppy joe mixture generously on toasted hamburger buns.
