👨🍳 Instructions
- Rinse dry lentils thoroughly under cold water; set aside. Heat olive oil in a large pot or Dutch oven over medium heat.
- Add chopped onion and bell pepper to the pot; sauté for 5-7 minutes until softened. Stir in minced garlic and tomato paste, cooking for 1 minute until fragrant.
- Add the rinsed lentils, diced tomatoes, vegetable broth, ketchup, Dijon mustard, soy sauce, brown sugar, smoked paprika, and cumin powder to the pot. Stir to combine all ingredients.
- Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 30-35 minutes, or until the lentils are tender and the sauce has thickened. Stir occasionally to prevent sticking.
- Taste and adjust seasonings as needed. Serve the hot lentil sloppy joe mixture generously on toasted hamburger buns.
