  1. Rinse the lentils thoroughly under cold water. Dice the Mettwurst sausage, carrots, celery root, and onions. Thinly slice the leek.
  2. Heat vegetable oil in a large pot. Sauté the diced Mettwurst until lightly browned, then add onions, carrots, celery root, and leek; cook for 5-7 minutes until softened.
  3. Add the rinsed lentils, vegetable broth, and bay leaf to the pot. Bring to a boil, then reduce heat, cover, and simmer for 45-60 minutes, or until lentils are tender.
  4. Remove the bay leaf. Stir in white wine vinegar. Season to taste with salt and pepper. Serve hot, optionally garnished with fresh parsley.
