- If using dry white beans, rinse thoroughly and soak them in cold water overnight. Drain and rinse again before cooking.
- In a large pot or Dutch oven, heat olive oil over medium heat. Add chopped onion and sauté until softened and translucent, about 5-7 minutes.
- Add minced garlic, cumin powder, sweet paprika, turmeric powder, and black pepper. Stir constantly for 1 minute until fragrant.
- Pour in the crushed tomatoes and vegetable broth. Add the cooked white beans and bring the mixture to a simmer.
- Reduce heat to low, cover, and simmer for at least 45 minutes, or up to 1.5 hours, allowing the flavors to meld and deepen. Stir occasionally to prevent sticking.
- Taste and adjust seasoning with salt and any additional spices if needed. Garnish with fresh cilantro before serving.
