👨‍🍳 Instructions

  1. Soak black-eyed beans overnight or for at least 4 hours, then drain and rinse well.
  2. Place the soaked beans in a large pot with fresh water, bring to a boil, then reduce heat and simmer for 45-60 minutes until tender.
  3. While beans are simmering, wash and chop the Swiss chard into 2-3 cm pieces; finely chop the onion and mince the garlic.
  4. In a separate large pot, heat a tablespoon of olive oil over medium heat and sauté the chopped onion until translucent, about 5-7 minutes.
  5. Add the minced garlic and chopped Swiss chard to the pot with the onion; sauté for another 5-10 minutes until the chard has softened and reduced in volume.
  6. Drain the cooked black-eyed beans and add them to the pot with the chard and onion mixture; stir well to combine.
  7. Season with salt and black pepper to taste, then squeeze fresh lemon juice over the dish just before serving; drizzle with extra olive oil if desired.
