👨‍🍳 Instructions

  1. Peel and dice carrots and potatoes into small, uniform cubes (approximately 0.5 cm). Trim and cut green beans into similar small pieces.
  2. Bring a pot of salted water to a boil. First, add the diced carrots and potatoes, cooking for 5-7 minutes until slightly tender.
  3. Add the green beans and green peas to the pot with the other vegetables and continue to cook for another 3-5 minutes, until all vegetables are tender but still firm.
  4. Drain the cooked vegetables thoroughly and immediately transfer them to a bowl filled with ice water to stop the cooking process and preserve their vibrant color.
  5. Once cooled, drain the vegetables again very well and pat them dry with a clean kitchen towel to remove excess moisture.
  6. In a large bowl, combine the cooled, dry vegetables with the mayonnaise. Season with salt and black pepper to taste, mixing gently until all vegetables are evenly coated.
  7. Serve immediately as a refreshing side dish, or chill in the refrigerator for at least 30 minutes for best flavor.
