- In a large bowl, combine the cornmeal and salt. Gradually add warm water, kneading continuously to form a firm but pliable dough.
- Divide the dough into equal portions and gently roll each portion into a thick circle (about 4-5 inches in diameter), using a little dry cornmeal or plastic wrap to prevent sticking if needed.
- Heat a tawa (griddle) over medium-high heat. Place a rolled roti onto the hot tawa and cook for about 1-2 minutes per side until light brown spots appear.
- Apply a little ghee to both sides of the roti as it cooks, pressing gently with a spatula to ensure even cooking and a golden finish.
- Serve hot, traditionally with Sarson da Saag or any curry of your choice.
