👨🍳 Instructions
- To make the dough, combine flour, water, yeast, 2g of sugar, 5g of salt, and 5g of olive oil in a large bowl. Knead for 10-15 minutes until smooth and elastic.
- Cover the bowl and let the dough rise in a warm place for 1-2 hours, or until doubled in size.
- Preheat your oven to the highest possible temperature (e.g., 220-250°C / 425-480°F) with a pizza stone or baking steel inside.
- Gently punch down the risen dough and divide it into four portions. Roll or stretch one portion into a 10-12 inch round on a lightly floured surface or parchment paper.
- Spread about 75g of San Marzano crushed tomatoes evenly over the dough, leaving a small border for the crust. Drizzle with 5g of olive oil and season with 1g of sugar and 2g of salt.
- Tear 50g of fresh mozzarella into small pieces and distribute them over the tomato sauce. Arrange 1g of fresh basil leaves on top.
- Carefully transfer the pizza to the preheated pizza stone or baking steel in the oven. Bake for 8-12 minutes, or until the crust is golden and the cheese is bubbly and lightly browned.
