👨‍🍳 Instructions

  1. To make the dough, combine flour, water, yeast, 2g of sugar, 5g of salt, and 5g of olive oil in a large bowl. Knead for 10-15 minutes until smooth and elastic.
  2. Cover the bowl and let the dough rise in a warm place for 1-2 hours, or until doubled in size.
  3. Preheat your oven to the highest possible temperature (e.g., 220-250°C / 425-480°F) with a pizza stone or baking steel inside.
  4. Gently punch down the risen dough and divide it into four portions. Roll or stretch one portion into a 10-12 inch round on a lightly floured surface or parchment paper.
  5. Spread about 75g of San Marzano crushed tomatoes evenly over the dough, leaving a small border for the crust. Drizzle with 5g of olive oil and season with 1g of sugar and 2g of salt.
  6. Tear 50g of fresh mozzarella into small pieces and distribute them over the tomato sauce. Arrange 1g of fresh basil leaves on top.
  7. Carefully transfer the pizza to the preheated pizza stone or baking steel in the oven. Bake for 8-12 minutes, or until the crust is golden and the cheese is bubbly and lightly browned.
