👨‍🍳 Instructions

  1. Clean the fresh anchovies by removing the head, gutting them, and carefully opening them to remove the central bone, creating two fillets. Rinse the fillets thoroughly under cold running water and pat them dry with paper towels.
  2. Arrange the anchovy fillets in a single layer in a non-reactive dish, such as glass or ceramic. Sprinkle with a pinch of salt, then pour over the white wine vinegar and lemon juice until the fish is mostly submerged.
  3. Cover the dish and refrigerate for at least 6-8 hours, or preferably overnight, allowing the acid to "cook" the fish. The fillets will turn opaque.
  4. Drain the excess vinegar and lemon juice from the marinated anchovies. Finely chop the fresh parsley and mince the garlic.
  5. Transfer the marinated anchovies to a clean serving plate. Drizzle generously with extra virgin olive oil and sprinkle with the chopped parsley and minced garlic. Serve immediately or keep refrigerated.
