👨🍳 Instructions
- In a large bowl, whisk together flour, sugar (part of total added sugar), salt (part of total salt), egg, milk, vanilla extract, and instant yeast until smooth. Let the batter rest for 1-2 hours at room temperature, covered.
- Just before cooking, add baking soda dissolved in a little water to the batter and stir well.
- Heat a heavy-bottomed non-stick pan or a dedicated martabak pan over medium-low heat. Once hot, pour a ladleful of batter into the center, swirling gently to coat the sides slightly for the characteristic crispy edge.
- Cover the pan and cook for about 5-7 minutes until small bubbles form on the surface and pop, creating a honeycomb texture. Sprinkle some sugar (part of total added sugar) evenly over the surface.
- Continue cooking uncovered for another 1-2 minutes until the base is golden brown and the top is set. Remove from the pan and immediately brush with melted butter.
- Generously drizzle with sweetened condensed milk, then sprinkle with chocolate sprinkles, chopped peanuts, and grated cheese. Fold the martabak in half, cut into portions, and serve warm.
