👨🍳 Instructions
- Rinse the red lentils (masoor dal) thoroughly under cold water until the water runs clear; soak them in fresh water for 15-20 minutes, then drain.
- In a pot, combine the drained lentils with 180ml of water and turmeric powder; bring to a boil, then reduce heat, cover, and simmer for 10-15 minutes or until tender.
- While lentils are cooking, heat vegetable oil in a separate small pan over medium heat; add cumin seeds and let them splutter.
- Add chopped onion to the pan and sauté until it turns translucent; then stir in ginger-garlic paste and cook for 1 minute until fragrant.
- Stir in chopped tomato, red chili powder, coriander powder, and garam masala; cook for 3-5 minutes, mashing the tomatoes occasionally, until the mixture thickens and oil separates.
- Pour the cooked tempering (tarka) into the pot with the tender lentils; stir well to combine.
- Simmer for another 2-3 minutes to allow the flavors to meld, adjusting consistency with hot water if needed. Garnish with fresh coriander leaves before serving.
