👨‍🍳 Instructions

  1. Carefully peel the green bananas, as they release sticky sap, and immediately place them in a bowl of cold water to prevent discoloration. Cut them into 2-3 inch chunks.
  2. Heat vegetable oil in a large pot or Dutch oven over medium heat, then sauté diced onions until softened and translucent, about 5-7 minutes.
  3. Add minced garlic and grated ginger, cooking for another minute until fragrant, then stir in the chopped bell peppers and carrots.
  4. Add diced tomatoes and curry powder, cooking for 5-7 minutes until the tomatoes begin to break down, forming a rich sauce.
  5. Drain the matoke chunks and add them to the pot along with vegetable broth or water and salt.
  6. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 25-30 minutes, or until the matoke is tender and easily pierced with a fork.
  7. Gently mash some of the matoke against the side of the pot to thicken the stew, if desired, and stir well before serving hot.
