👨‍🍳 Instructions

  1. In a bowl, combine millet flour and half of the water to form a firm dough. Knead for 5-7 minutes until smooth, adding more water if needed, then cover and let rest for 15 minutes.
  2. Roll out the dough thinly on a lightly floured surface and cut into desired noodle shapes. Bring a pot of salted water to a boil.
  3. Add the millet noodles to the boiling water and cook for 3-5 minutes until al dente. Drain well and rinse briefly with cold water to prevent sticking.
  4. In a large skillet or wok, heat the sesame oil over medium-high heat. Add minced garlic and grated ginger, stir-fry for 30 seconds until fragrant.
  5. Add the shredded carrots, cabbage, and bell pepper to the skillet. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
  6. Add the drained millet noodles and soy sauce to the skillet with the vegetables. Toss everything together for 1-2 minutes to combine and heat through.
  7. Garnish with chopped green onions and serve immediately.
