- Millet (dry) 180 g · 680 kcal

👨🍳 Instructions
- Rinse the millet thoroughly under cold running water until the water runs clear; this removes bitterness. Drain well.
- In a pot or deep skillet, heat the vegetable oil over medium heat. Add the chopped onion and sauté until softened and translucent, about 5-7 minutes.
- Add the grated carrots to the pot and continue to sauté for another 3-5 minutes until they soften slightly.
- Stir in the rinsed millet, coating it with the oil and vegetables. Pour in the vegetable broth and add salt and any desired spices like cumin or turmeric.
- Bring the mixture to a boil, then reduce the heat to low, cover the pot tightly, and simmer for 15-20 minutes, or until all the liquid is absorbed and the millet is tender.
- Once cooked, remove the pot from the heat and let it rest, covered, for 5-10 minutes to allow the millet to steam and fluff up.
- Fluff the millet pilaf with a fork and serve warm, garnished with fresh herbs if desired.
