👨‍🍳 Instructions

  1. Rinse the millet thoroughly under cold running water until the water runs clear; this removes bitterness. Drain well.
  2. In a pot or deep skillet, heat the vegetable oil over medium heat. Add the chopped onion and sauté until softened and translucent, about 5-7 minutes.
  3. Add the grated carrots to the pot and continue to sauté for another 3-5 minutes until they soften slightly.
  4. Stir in the rinsed millet, coating it with the oil and vegetables. Pour in the vegetable broth and add salt and any desired spices like cumin or turmeric.
  5. Bring the mixture to a boil, then reduce the heat to low, cover the pot tightly, and simmer for 15-20 minutes, or until all the liquid is absorbed and the millet is tender.
  6. Once cooked, remove the pot from the heat and let it rest, covered, for 5-10 minutes to allow the millet to steam and fluff up.
  7. Fluff the millet pilaf with a fork and serve warm, garnished with fresh herbs if desired.
