👨‍🍳 Instructions

  1. Rinse the millet thoroughly under running water, then soak it in 1 cup of water for 30 minutes. Drain completely before use.
  2. Heat the vegetable oil in a pan or kadai over medium heat. Add mustard seeds, urad dal, and chana dal; sauté until the dals turn light golden.
  3. Add curry leaves, chopped green chili, and grated ginger. Sauté for about one minute until fragrant.
  4. Next, add the chopped onions and sauté until they turn translucent, about 3-4 minutes.
  5. Stir in the chopped carrots and green peas, cooking for another 2-3 minutes until slightly tender.
  6. Pour in 150ml of water and add salt to taste. Bring the mixture to a rolling boil.
  7. Add the drained millet, mix well, cover the pan, and cook on low heat for 10-12 minutes or until all water is absorbed and the millet is tender.
  8. Turn off the heat and let the upma rest, covered, for 5 minutes. Then, gently fluff it with a fork before serving.
  9. Garnish with fresh cilantro and a squeeze of lemon juice, then serve hot.
