👨🍳 Instructions
- Prepare the soffritto: Finely chop the onion, carrot, celery, and garlic. Heat the olive oil in a large pot over medium heat, then add the chopped vegetables and sauté until softened, about 8-10 minutes.
- Add the canned peeled tomatoes, breaking them up with a spoon, and the cannellini beans to the pot. Stir well and simmer for 10 minutes to allow the flavors to meld.
- Pour in the vegetable broth and add the black kale, stirring occasionally. Bring to a simmer, then reduce heat to low, cover, and cook for 25-30 minutes until the kale is tender.
