👨‍🍳 Instructions

  1. Rinse the red lentils thoroughly under cold water until the water runs clear; set aside to drain.
  2. Finely chop the onions and mince the garlic and ginger.
  3. Heat the vegetable oil in a large pot or Dutch oven over medium heat, then add the chopped onions.
  4. Sauté the onions, stirring frequently, until they are very soft and deeply caramelized, about 10-15 minutes.
  5. Add the minced garlic and ginger, cooking for another 2 minutes until fragrant.
  6. Stir in the Berbere spice mix and tomato paste, cooking for 1-2 minutes to toast the spices.
  7. Add the rinsed lentils and water to the pot, bring to a boil, then reduce heat to low.
  8. Cover and simmer for 30-40 minutes, or until the lentils are very tender and the stew has thickened, stirring occasionally.
  9. Season with salt to taste, then remove from heat and let it rest for a few minutes before serving.
