👨🍳 Instructions
- Heat cooking oil in a large pot or karahi over medium heat. Add cumin seeds and let them splutter.
- Add chopped onions and green chilies. Sauté until the onions turn translucent and light golden.
- Stir in ginger-garlic paste and cook for 1-2 minutes until fragrant.
- Add chopped tomatoes and cook until they soften and the oil separates from the mixture.
- Stir in turmeric powder, coriander powder, and red chili powder. Cook for 1-2 minutes, stirring constantly.
- Add the mixed vegetables and water. Mix well, cover, and simmer for 15-20 minutes, or until vegetables are tender.
- Pour in the light coconut milk and garam masala. Stir gently and simmer for another 5 minutes.
- Garnish with fresh chopped coriander and serve hot with rice or naan.
