👨‍🍳 Instructions

  1. Heat cooking oil in a large pot or karahi over medium heat. Add cumin seeds and let them splutter.
  2. Add chopped onions and green chilies. Sauté until the onions turn translucent and light golden.
  3. Stir in ginger-garlic paste and cook for 1-2 minutes until fragrant.
  4. Add chopped tomatoes and cook until they soften and the oil separates from the mixture.
  5. Stir in turmeric powder, coriander powder, and red chili powder. Cook for 1-2 minutes, stirring constantly.
  6. Add the mixed vegetables and water. Mix well, cover, and simmer for 15-20 minutes, or until vegetables are tender.
  7. Pour in the light coconut milk and garam masala. Stir gently and simmer for another 5 minutes.
  8. Garnish with fresh chopped coriander and serve hot with rice or naan.
