👨🍳 Instructions
- Heat vegetable oil in a large pan or kadai over medium heat. Add cumin seeds and let them splutter for a few seconds.
- Add chopped onion and sauté until it turns golden brown and translucent. Then, add ginger-garlic paste and cook for 1-2 minutes until fragrant.
- Stir in the chopped tomatoes and cook until they soften and the oil starts to separate from the masala. Mash them lightly with the back of your spoon.
- Add turmeric powder, coriander powder, and red chili powder. Sauté for a minute until the raw smell of spices disappears.
- Add chopped potatoes, cauliflower, green beans, and carrots. Mix well with the masala, add a splash of water, cover, and cook for 10-12 minutes until vegetables are partially cooked.
- Now, add green peas and bell pepper (capsicum). Continue to cook, covered, for another 5-7 minutes, or until all vegetables are tender and cooked through.
- Finally, sprinkle with garam masala and fresh cilantro. Mix gently and serve hot with roti, naan, or rice.
