🛒 Ingredients

  • Crusty bread (e.g., bolillo or baguette) 120 g · 320 kcal
  • Refried pinto beans 240 g · 300 kcal
  • Shredded cheese (Monterrey Jack, Oaxaca, or mozzarella) 60 g · 220 kcal

👨‍🍳 Instructions

  1. Preheat your broiler or oven to high (around 200°C / 400°F). Slice the crusty bread horizontally to create two open-face halves for each serving.
  2. Lightly toast the bread halves cut-side up in the oven for a few minutes until slightly golden. This helps prevent them from getting soggy.
  3. Spread a generous layer of warm refried pinto beans evenly over the toasted bread halves.
  4. Sprinkle the shredded cheese generously over the refried beans on each bread half.
  5. Place the molletes back in the oven or under the broiler for 5-10 minutes, or until the cheese is completely melted and bubbly, and the edges of the bread are golden.
  6. Serve the molletes immediately while hot, optionally with fresh pico de gallo, salsa, or pickled jalapeños on the side.
