👨‍🍳 Instructions

  1. Soak the moong dal in water for at least 30 minutes, or preferably 2-3 hours, then drain thoroughly.
  2. Boil the soaked moong dal in fresh water for 8-10 minutes until tender but still firm; drain well and let it cool completely.
  3. Finely dice the cucumber, tomato, red onion, and green chili. Chop the fresh cilantro.
  4. In a large bowl, combine the cooled moong dal with all the diced vegetables and chopped cilantro.
  5. Add lemon juice, salt, and black pepper to taste; mix gently until all ingredients are well combined.
  6. Serve immediately as a refreshing salad or side dish.
