👨🍳 Instructions
- Clean the mussels thoroughly: scrub shells, remove beards (byssus threads), and discard any open mussels that do not close when tapped.
- In a large pot with a lid, melt butter and olive oil over medium heat. Add finely diced shallots and minced garlic, sautéing until softened and fragrant, about 2-3 minutes.
- Pour in the dry white wine and bring to a simmer for 1 minute to cook off some alcohol.
- Add the cleaned mussels to the pot, cover tightly with the lid, and cook for 5-7 minutes, shaking the pot occasionally.
- Mussels are cooked when their shells have opened. Discard any mussels that remain closed.
- Stir in the chopped fresh parsley. Serve immediately in deep bowls, ensuring each serving gets plenty of the aromatic broth.
