  1. Clean the mussels thoroughly: scrub shells, remove beards (byssus threads), and discard any open mussels that do not close when tapped.
  2. In a large pot with a lid, melt butter and olive oil over medium heat. Add finely diced shallots and minced garlic, sautéing until softened and fragrant, about 2-3 minutes.
  3. Pour in the dry white wine and bring to a simmer for 1 minute to cook off some alcohol.
  4. Add the cleaned mussels to the pot, cover tightly with the lid, and cook for 5-7 minutes, shaking the pot occasionally.
  5. Mussels are cooked when their shells have opened. Discard any mussels that remain closed.
