👨‍🍳 Instructions

  1. Finely grate the zucchini. Place the grated zucchini in a colander or clean kitchen towel and squeeze out as much excess liquid as possible to prevent soggy fritters.
  2. In a large bowl, combine the squeezed zucchini, eggs, all-purpose flour, chopped fresh dill, parsley, mint, green onions, baking powder, salt, and black pepper. Mix well until just combined.
  3. Heat olive oil in a large non-stick pan over medium heat. Drop spoonfuls of the zucchini mixture into the hot oil, flattening them slightly with the back of a spoon to form small fritters.
  4. Fry the mucver for 3-5 minutes on each side, or until golden brown and cooked through. Work in batches to avoid overcrowding the pan.
  5. Transfer the cooked mucver to a plate lined with paper towels to drain any excess oil. Serve hot, optionally with a side of plain yogurt or a garlic-yogurt sauce.
