- Thoroughly clean the fresh mussels by scrubbing their shells and removing any 'beards'; discard any mussels that are open and do not close when tapped.
- In a large pot, heat the olive oil over medium heat, then sauté the minced garlic and chopped chili pepper until fragrant, about 1-2 minutes.
- Add the crushed tomatoes to the pot and simmer for 5 minutes, allowing the sauce to thicken slightly.
- Pour in the dry white wine and bring to a quick boil, letting the alcohol evaporate for about 1 minute.
- Add the cleaned mussels to the pot, cover tightly, and cook for 5-7 minutes, shaking the pot occasionally, until all mussels have opened. Discard any unopened mussels.
