  1. Wash and trim the zucchini, then either steam or boil until very tender. Alternatively, cut them in half lengthwise, brush with a little olive oil, and roast in an oven preheated to 200°C (400°F) for 20-25 minutes until soft.
  2. Once cooked, let the zucchini cool slightly, then scoop out the flesh into a bowl, discarding any excess water if boiled. Mash the zucchini flesh thoroughly with a fork or potato masher until smooth.
  3. Add the tahini, minced garlic, and fresh lemon juice to the mashed zucchini. Mix well to combine all ingredients evenly.
  4. Season the mutabal with salt to taste, stirring until fully incorporated. For best flavor, let it rest in the refrigerator for at least 30 minutes.
  5. Transfer the mutabal koosa to a serving dish, drizzle generously with olive oil, and garnish with fresh parsley or mint if desired, then serve.
