- Wash and trim the zucchini, then either steam or boil until very tender. Alternatively, cut them in half lengthwise, brush with a little olive oil, and roast in an oven preheated to 200°C (400°F) for 20-25 minutes until soft.
- Once cooked, let the zucchini cool slightly, then scoop out the flesh into a bowl, discarding any excess water if boiled. Mash the zucchini flesh thoroughly with a fork or potato masher until smooth.
- Add the tahini, minced garlic, and fresh lemon juice to the mashed zucchini. Mix well to combine all ingredients evenly.
- Season the mutabal with salt to taste, stirring until fully incorporated. For best flavor, let it rest in the refrigerator for at least 30 minutes.
- Transfer the mutabal koosa to a serving dish, drizzle generously with olive oil, and garnish with fresh parsley or mint if desired, then serve.
