👨🍳 Instructions
- Wash and finely chop the fresh fenugreek leaves; set aside. In a large bowl, combine whole wheat flour, gram flour, chopped fenugreek leaves, ginger-garlic-green chili paste, turmeric powder, red chili powder, coriander powder, cumin powder, half of the sesame seeds, asafoetida, salt, baking soda, and plain yogurt.
- Add 1 tablespoon of vegetable oil to the mixture and knead well, adding a little water if needed, to form a firm but pliable dough. Divide the dough into small, cylindrical portions, each about 2-3 inches long.
- Steam the muthia rolls in a steamer for about 15-20 minutes, or until cooked through and firm. Let them cool slightly, then slice them into half-inch thick pieces.
- For the tempering, heat the remaining vegetable oil in a small pan. Add mustard seeds, let them splutter, then add the remaining sesame seeds, curry leaves (optional), and a pinch of asafoetida.
- Pour the hot tempering mixture over the sliced muthia pieces and toss gently to coat. Serve the Muthia warm with green chutney or yogurt.
