- Octopus, raw 800 g · 640 kcal

👨🍳 Instructions
- Clean the octopus thoroughly. If large, you may need to tenderize it by hitting it with a mallet or freezing and thawing.
- Chop the octopus into manageable pieces. In a large pot or Dutch oven, heat the olive oil over medium heat.
- Add the chopped onion and sauté until softened, about 5-7 minutes. Stir in the minced garlic and cook for another minute until fragrant.
- Add the chopped octopus to the pot and cook for 5-10 minutes until it changes color and releases its liquids. Pour in the white wine and simmer until it has mostly evaporated.
- Stir in the canned chopped tomatoes and bay leaf. Season with salt and pepper to taste. Bring to a gentle simmer, then reduce heat to low, cover, and cook for 60 minutes.
- Add the peeled and cubed potatoes to the pot. Continue to simmer, covered, for another 60 minutes, or until the octopus is very tender and the potatoes are cooked through.
- Remove the bay leaf, then stir in the fresh chopped parsley just before serving. Serve hot, perhaps with crusty bread.
