👨🍳 Instructions
- Peel and cut the potatoes into 2-3 cm cubes. Rinse them thoroughly under cold water to remove excess starch, then pat them completely dry with a kitchen towel.
- Heat a generous amount of olive oil in a large skillet or deep fryer over medium-high heat. Fry the potato cubes in batches until golden brown and crispy on all sides, then remove with a slotted spoon and drain on paper towels.
- For the sauce: In a separate pan, heat a little olive oil over medium heat. Sauté the finely chopped onion until soft, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.
- Stir in the smoked paprika and cayenne pepper, cooking for 30 seconds. Pour in the crushed tomatoes, white wine vinegar, and a pinch of sugar. Season with salt to taste.
- Bring the sauce to a simmer and cook for 10-15 minutes, stirring occasionally, until it thickens slightly and the flavors meld. You can blend the sauce for a smoother consistency if desired.
