👨🍳 Instructions
- Soak raw peanuts in hot water for 30 minutes, then drain and peel. Blend peeled peanuts with a little fresh water until a smooth, thick paste forms; set aside.
- Cut beef into small cubes. In a large pot, heat oil over medium-high heat and brown the beef cubes on all sides.
- Add diced onion and minced garlic to the pot, sauté until fragrant and translucent, about 3-5 minutes. Stir in aji amarillo paste and cumin powder.
- Add the beef broth (or water) to the pot, bring to a boil, then reduce heat, cover, and simmer for 30-40 minutes until beef is tender.
- Add diced potatoes and carrots to the pot. Continue to simmer for 15-20 minutes, or until vegetables are tender.
- Stir in the peanut paste, ensuring it dissolves completely without clumping. Cook for another 10-15 minutes, stirring occasionally, until the soup thickens slightly.
- Add green peas and cook for 2-3 minutes more. Season generously with salt and pepper to taste.
- Ladle hot soup into bowls and garnish with fresh chopped cilantro.
