👨‍🍳 Instructions

  1. Soak the yellow split peas in plenty of cold water overnight, or for at least 8 hours; then drain them well before cooking.
  2. Combine the drained split peas, chopped onion, and 1.5 liters of fresh water (or vegetable broth) in a large saucepan. Bring to a boil, then reduce heat and simmer gently.
  3. Cook for 60-90 minutes, stirring occasionally, until the peas are very tender and have absorbed most of the liquid, forming a thick paste.
  4. Remove from heat, stir in the olive oil, and season generously with salt and black pepper to taste.
  5. Mash the mixture thoroughly with a potato masher or process briefly in a food processor for a smoother consistency, adding a splash of hot water if needed to reach desired texture. Serve warm as a side dish.
