👨🍳 Instructions
- In a large bowl, combine the wheat flour, baking soda, and a pinch of salt. Add the softened lard and rub it into the flour mixture with your fingertips until crumbly.
- Gradually add warm water, a little at a time, mixing until a soft, cohesive dough forms. Knead the dough on a lightly floured surface for about 5-7 minutes until smooth and elastic.
- Cover the dough with a clean cloth and let it rest at room temperature for at least 30 minutes, or up to 2 hours.
- Divide the rested dough into 4 equal portions. On a lightly floured surface, roll each portion into a thin, round disc, about 20-25 cm (8-10 inches) in diameter.
- Heat a heavy-bottomed pan or a traditional piastra (griddle) over medium-high heat. Cook each piadina for 2-3 minutes per side until golden brown with characteristic dark spots and puffed pockets.
- Serve the piadina immediately, either plain or filled with your favorite ingredients like cured meats, soft cheeses, or vegetables.
