  1. In a large bowl, combine the wheat flour, baking soda, and a pinch of salt. Add the softened lard and rub it into the flour mixture with your fingertips until crumbly.
  2. Gradually add warm water, a little at a time, mixing until a soft, cohesive dough forms. Knead the dough on a lightly floured surface for about 5-7 minutes until smooth and elastic.
  3. Cover the dough with a clean cloth and let it rest at room temperature for at least 30 minutes, or up to 2 hours.
  4. Divide the rested dough into 4 equal portions. On a lightly floured surface, roll each portion into a thin, round disc, about 20-25 cm (8-10 inches) in diameter.
  5. Heat a heavy-bottomed pan or a traditional piastra (griddle) over medium-high heat. Cook each piadina for 2-3 minutes per side until golden brown with characteristic dark spots and puffed pockets.
  6. Serve the piadina immediately, either plain or filled with your favorite ingredients like cured meats, soft cheeses, or vegetables.
