  1. Rinse the salt-cured herring fillets under cold water to remove excess salt, then pat dry with paper towels. Cut the fillets into 1-inch (2.5 cm) pieces.
  2. Thinly slice the onion into rings. In a glass jar or non-reactive container, layer the herring pieces and onion rings.
  3. In a small saucepan, combine vinegar, water, sugar, bay leaves, black peppercorns, allspice berries, and mustard seeds. Bring to a simmer over medium heat, stirring until the sugar dissolves.
  4. Remove the pickling liquid from the heat and let it cool completely. Once cooled, pour the liquid over the herring and onions in the container, ensuring everything is submerged.
  5. Cover the container tightly and refrigerate for at least 24-48 hours before serving, allowing the flavors to meld. For best results, allow up to 3 days of marination.
