👨🍳 Instructions
- To make the dough, combine flour, egg, and warm water in a large bowl; knead until smooth and elastic, about 5-7 minutes. Cover the dough and let it rest for 30 minutes at room temperature.
- For the filling, boil potatoes until tender, then mash them smoothly. Sauté finely diced onion in butter until golden brown, then mix with the mashed potatoes and farmer's cheese.
- Divide the dough into portions and roll each thinly on a lightly floured surface. Cut out circles using a glass or cookie cutter.
- Place a spoonful of filling in the center of each dough circle, then fold the dough in half to create a half-moon shape. Pinch the edges firmly to seal the pierogi completely.
- Bring a large pot of salted water to a rolling boil. Carefully drop the pierogi into the boiling water and cook for 2-3 minutes after they float to the surface.
- Remove the cooked pierogi with a slotted spoon. Serve immediately with a dollop of sour cream, crispy fried onions, or melted butter.
