👨🍳 Instructions
- Rinse dried pinto beans thoroughly and soak them in water overnight, or quick-soak by boiling for 1 minute and letting them sit for 1 hour; then drain and rinse again.
- In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced yellow onion and sauté until softened, about 5-7 minutes.
- Add the minced garlic, ground cumin, chili powder, and dried oregano to the pot; cook for another minute until fragrant, stirring constantly.
- Stir in the drained pinto beans, diced tomatoes, and vegetable broth. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 60-90 minutes, or until beans are very tender.
- Season the soup with salt and pepper to taste. For a thicker consistency, mash some of the beans against the side of the pot with a spoon or potato masher.
- Ladle the hot pinto bean soup into bowls. Garnish with fresh cilantro and a lime wedge before serving.
