  1. Dice the onions, green bell peppers, and tomatoes into similar-sized pieces; finely mince the garlic cloves.
  2. Heat olive oil in a large skillet or pot over medium heat, then add the diced onions and cook until softened, about 5-7 minutes.
  3. Add the diced green bell peppers to the skillet and cook for another 8-10 minutes, stirring occasionally, until they start to soften.
