- Gently rinse the fresh figs and trim the stem ends. You can leave them whole or halve them, depending on their size and your preference.
- In a medium saucepan, combine water, granulated sugar, lemon zest (and a squeeze of juice if desired), and cinnamon stick. Bring the mixture to a gentle simmer over medium heat, stirring until the sugar dissolves completely.
- Add the prepared figs to the simmering syrup, ensuring they are mostly submerged. Reduce the heat to low, cover the saucepan, and gently poach for 10-15 minutes, or until the figs are tender but still hold their shape.
