👨🍳 Instructions
- Peel the pears, leaving the stems intact. Carefully core them from the bottom using a melon baller or small spoon.
- In a saucepan large enough to hold the pears upright, combine water, granulated sugar, lemon juice, cinnamon stick, and vanilla extract. Bring to a simmer over medium heat, stirring until the sugar dissolves.
- Gently place the peeled pears into the simmering liquid. Ensure they are mostly submerged; add a little more water if needed. You can use a parchment paper "cartouche" to keep them submerged.
- Reduce the heat to low, cover, and simmer for 20-30 minutes, or until the pears are tender when pierced with a knife but still hold their shape. Cooking time varies by pear ripeness and type.
- Remove the pears from the poaching liquid and set aside. Increase the heat on the liquid and simmer for 5-10 minutes until it thickens slightly into a syrup.
- Pour the warm syrup over the pears. Serve warm or chilled, optionally with a scoop of vanilla ice cream or a dollop of crème fraîche.
