  1. Peel the pears, leaving the stems intact. Carefully core them from the bottom using a melon baller or small spoon.
  2. In a saucepan large enough to hold the pears upright, combine water, granulated sugar, lemon juice, cinnamon stick, and vanilla extract. Bring to a simmer over medium heat, stirring until the sugar dissolves.
  3. Gently place the peeled pears into the simmering liquid. Ensure they are mostly submerged; add a little more water if needed. You can use a parchment paper "cartouche" to keep them submerged.
  4. Reduce the heat to low, cover, and simmer for 20-30 minutes, or until the pears are tender when pierced with a knife but still hold their shape. Cooking time varies by pear ripeness and type.
  5. Remove the pears from the poaching liquid and set aside. Increase the heat on the liquid and simmer for 5-10 minutes until it thickens slightly into a syrup.
  6. Pour the warm syrup over the pears. Serve warm or chilled, optionally with a scoop of vanilla ice cream or a dollop of crème fraîche.
