👨🍳 Instructions
- Wash quinces thoroughly, then peel them using a vegetable peeler. Cut each quince in half lengthwise and carefully remove the core and seeds.
- In a large pot, combine water, granulated sugar, lemon juice, cinnamon stick, star anise, and scraped vanilla bean. Bring the mixture to a simmer over medium heat, stirring until the sugar dissolves.
- Add the quince halves to the simmering syrup. Ensure they are fully submerged; use a piece of parchment paper or a small plate to keep them down if necessary.
- Reduce heat to low, cover the pot, and simmer gently for 1.5 to 2 hours, or until the quince is tender and has turned a beautiful rosy-amber color. Check occasionally and add more water if the syrup reduces too much.
- Once cooked, remove the quince from the syrup and let them cool. The poached quince can be served warm or chilled, optionally with a drizzle of the cooking syrup, a scoop of vanilla ice cream, or a dollop of mascarpone.
