- Prepare the poaching liquid: In a large, shallow pan, combine water, sliced shallot, half a lemon (sliced), bay leaf, and a pinch of salt. Bring to a gentle simmer.
- Gently slide the fresh skate wing into the simmering liquid; ensure it's fully submerged. Reduce heat to low and poach for 8-12 minutes, depending on thickness, until the flesh is opaque and separates easily from the cartilage.
