  1. Bring water or broth to a boil in a large saucepan, then slowly whisk in the polenta to prevent lumps.
  2. Reduce heat to low and cook, stirring frequently, for 30-40 minutes or until the polenta is thick and pulls away from the sides of the pan.
  3. Remove from heat, stir in the grated Parmesan cheese, and season with salt and pepper to taste.
  4. Pour the hot polenta into a lightly oiled 9x13 inch baking dish or sheet pan, spreading it evenly to about 1/2 inch thickness.
  5. Let the polenta cool completely and firm up, which can take 1-2 hours at room temperature or 30 minutes in the refrigerator.
  6. Once firm, use a sharp knife or cookie cutters to cut the polenta into desired bite-sized shapes (squares, rounds, triangles).
  7. Preheat your oven to 200°C (400°F) and lightly brush the polenta bites with olive oil.
  8. Arrange the polenta bites in a single layer on a baking sheet and bake for 20-25 minutes, flipping halfway, until golden brown and crispy. Serve warm.
