- Fine Polenta (Cornmeal) 200 g · 720 kcal
- Water or Vegetable Broth 800 g · 0 kcal
- Grated Parmesan Cheese 50 g · 195 kcal
- Olive Oil 15 g · 135 kcal
👨🍳 Instructions
- Bring water or broth to a boil in a large saucepan, then slowly whisk in the polenta to prevent lumps.
- Reduce heat to low and cook, stirring frequently, for 30-40 minutes or until the polenta is thick and pulls away from the sides of the pan.
- Remove from heat, stir in the grated Parmesan cheese, and season with salt and pepper to taste.
- Pour the hot polenta into a lightly oiled 9x13 inch baking dish or sheet pan, spreading it evenly to about 1/2 inch thickness.
- Let the polenta cool completely and firm up, which can take 1-2 hours at room temperature or 30 minutes in the refrigerator.
- Once firm, use a sharp knife or cookie cutters to cut the polenta into desired bite-sized shapes (squares, rounds, triangles).
- Preheat your oven to 200°C (400°F) and lightly brush the polenta bites with olive oil.
- Arrange the polenta bites in a single layer on a baking sheet and bake for 20-25 minutes, flipping halfway, until golden brown and crispy. Serve warm.
