👨‍🍳 Instructions

  1. Boil potatoes until very tender; drain and mash thoroughly. While mashing, mix in finely chopped yellow onion and minced garlic.
  2. Season the mashed potato mixture generously with salt and pepper to taste. Let it cool slightly.
  3. Warm the corn tortillas slightly to make them pliable. This prevents cracking when rolling.
  4. Place a spoonful of mashed potato mixture near one edge of a warm tortilla. Roll the tortilla tightly to form a flauta.
  5. Secure the flautas with toothpicks if necessary, especially if they tend to unroll. Repeat with the remaining tortillas and filling.
  6. Heat about 2 inches of vegetable oil in a deep skillet or pot over medium-high heat to 350°F (175°C).
  7. Carefully place 3-4 flautas into the hot oil, ensuring not to overcrowd the pan. Fry for 2-4 minutes, turning occasionally, until golden brown and crispy.
  8. Remove flautas from the oil and place them on a wire rack lined with paper towels to drain excess oil. Repeat with the remaining flautas.
  9. Serve potato flautas immediately with your favorite toppings such as salsa, guacamole, vegan crema, or shredded lettuce.
