👨🍳 Instructions
- Boil potatoes until very tender; drain and mash thoroughly. While mashing, mix in finely chopped yellow onion and minced garlic.
- Season the mashed potato mixture generously with salt and pepper to taste. Let it cool slightly.
- Warm the corn tortillas slightly to make them pliable. This prevents cracking when rolling.
- Place a spoonful of mashed potato mixture near one edge of a warm tortilla. Roll the tortilla tightly to form a flauta.
- Secure the flautas with toothpicks if necessary, especially if they tend to unroll. Repeat with the remaining tortillas and filling.
- Heat about 2 inches of vegetable oil in a deep skillet or pot over medium-high heat to 350°F (175°C).
- Carefully place 3-4 flautas into the hot oil, ensuring not to overcrowd the pan. Fry for 2-4 minutes, turning occasionally, until golden brown and crispy.
- Remove flautas from the oil and place them on a wire rack lined with paper towels to drain excess oil. Repeat with the remaining flautas.
- Serve potato flautas immediately with your favorite toppings such as salsa, guacamole, vegan crema, or shredded lettuce.
