  1. In a large bowl, combine Masa Harina with warm water and a pinch of salt; knead for about 5-7 minutes until a soft, pliable, and non-sticky dough forms, adding more water if needed. Cover the dough with a damp cloth and let it rest for 10 minutes.
  2. For each pupusa, take a golf-ball sized portion of dough, flatten it into a thick disc in the palm of your hand, and create a small well in the center.
  3. Fill the well with a spoonful of refried beans and a spoonful of shredded cheese. Carefully fold the edges of the dough over the filling to enclose it completely, then gently flatten and reshape into a disc about 4-5 inches in diameter and ½ inch thick.
  4. Heat a comal or heavy-bottomed skillet over medium heat and lightly grease with vegetable oil. Cook each pupusa for 5-7 minutes per side, or until golden brown and slightly puffed.
  5. Serve the Pupusas de Frijol y Queso immediately, traditionally accompanied by curtido (pickled cabbage slaw) and salsa roja.
