👨🍳 Instructions
- Rinse the quinoa thoroughly under cold running water for several minutes until the water runs clear. Drain well.
- In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and bell pepper, sautéing for about 5 minutes until softened.
- Add the minced garlic and cook for another minute until fragrant. Stir in the diced tomatoes.
- Pour in the vegetable broth and add the rinsed quinoa, diced potatoes, and diced carrots. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until potatoes are tender and quinoa is cooked.
- Add the frozen green peas and cook for another 5 minutes until heated through. Season with salt and pepper to taste.
- Ladle the Sopa de Quinua into bowls and garnish with fresh chopped cilantro before serving.
