👨‍🍳 Instructions

  1. Rinse the quinoa thoroughly under cold running water for several minutes until the water runs clear. Drain well.
  2. In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and bell pepper, sautéing for about 5 minutes until softened.
  3. Add the minced garlic and cook for another minute until fragrant. Stir in the diced tomatoes.
  4. Pour in the vegetable broth and add the rinsed quinoa, diced potatoes, and diced carrots. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until potatoes are tender and quinoa is cooked.
  5. Add the frozen green peas and cook for another 5 minutes until heated through. Season with salt and pepper to taste.
  6. Ladle the Sopa de Quinua into bowls and garnish with fresh chopped cilantro before serving.
