  1. Wash and cut red potatoes into 1-inch (2.5 cm) cubes, leaving the skin on. Place them in a large pot and cover with cold water by about an inch. Add a generous pinch of salt.
  2. Bring to a boil, then reduce heat and simmer for 15-20 minutes or until potatoes are fork-tender. Drain thoroughly and let them cool completely.
  3. While potatoes cool, finely chop the celery, red onion, and fresh dill. Dice the hard-boiled eggs.
  4. In a large bowl, whisk together the mayonnaise, Dijon mustard, apple cider vinegar, salt, and black pepper to create the dressing.
  5. Add the cooled potatoes, chopped celery, red onion, dill, and hard-boiled eggs to the bowl with the dressing. Gently fold everything together until well combined.
  6. Cover the bowl and refrigerate for at least 1 hour before serving to allow the flavors to meld. Stir well before serving.
