- Preheat your oven to 200°C (400°F) and pat the squab dry with paper towels.
- Season the squab generously inside and out with salt and black pepper; stuff the cavity with rosemary, thyme, and a crushed garlic clove.
- Heat unsalted butter in an oven-safe skillet over medium-high heat until shimmering, then sear the squab on all sides until golden brown, about 2-3 minutes per side.
- Transfer the skillet to the preheated oven and roast for 15-20 minutes, or until an internal temperature of 60-65°C (140-150°F) is reached for medium-rare.
- Remove the squab from the oven, loosely tent with foil, and let it rest for 5-10 minutes before carving and serving.
